Chèvre Chaud Salad with Roasted Peach


 

What is something, I would recommend to cook while in France? Something easy, filling, with the right kind of flavor variety. Probably this salad, topped with crunchy bread, creamy goat cheese and sweet peach. A combination, that matches surprisingly wonderful.

The basic ingredients should be found on every french market. Some cheese, salad and baguette, as well as fresh fruit. The vinaigrette is fairly simpel.

 
 

My favorite restaurant nearby my hometown inspired me to try this dish myself. Chèvre Chaud is a staple for my french cuisine. I guess my family enjoyed it as well, as we got to eat about 6 cheeses in total. Its addicting, I warn you. To be enjoyed on a mild summer evening, with the view into the southern french countryside, with some rose wine in your hands.

But now, enough of my little intro. Lets get cooking (or rather snipping)

 

 

Chevre Chaud Salad with Roasted Peach

Ingredients:

  • 4 goat cheese rolls (rather younger ones)

  • 1 red oak leaf lettuce

  • 1/2 baguette

  • 2 peaches

  • 8 tbsp walnut oil

  • 3-4 tbsp white wine vinegar

  • 2 tsp dijon mustard, classic

  • 1 tsp honey

  • salt

  • pepper

Instructions:

  • Start by adding the cheese rolls into the oven at 150°C for about 5-10 min. (depends on how soft the cheese should get), be careful, they can leek

  • Next, take the leafs of the lettuce and wash it. If you like smaller leafs, just rip them apart one or two more times

  • Cut the baguette in 3 finger wide slices. Add some walnut oil into a pan and wait until its hot. Now add the baguette slices and wait for 30sec., letting them tan a little bit, on both sides. Take them to the side

  • Next, cut the peaches in half and add them into a grilling pan, of just average pan, on a low heat, the cut open side should be facing the pan. Wait for a few minutes, to let them get softer and a little tan, the sugar should caramelize a little bit. Take them to the side and cut into smaller stripes, but still laying down in the same shape.

  • Prepare the vinaigrette, by adding the remaining ingredients, add salt and pepper to taste, and mix them well.

  • Now onto the arrangement

  • Take some of the lettuce and place it into a bowl, adding some vinaigrette and mixing it carefully with you hands, or salad cutlery. Place it onto a flat plate.

  • Now, add one grilled peach on the outer part of the plate and shift the pieces a little bit apart from each other. Drizzle some more vinaigrette on top.

  • Finally, take the cheese out of the oven and assemble it on top of a baguette slice. This should be placed onto the salad.

 

And there you have it, a very classic french salad, with wonderful creamy goats cheese, slightly sour vinaigrette and a caramelized peach for the sweettooth.
